Baker turns passion into a profession with cheesecake balls

For New Hyde Park resident Pat Pilla, baking has always been her passion, but it wasn’t until a few years ago that she pursued it professionally and started Cheebonnet.

She set out to make a delicious dessert that was not too filling. She came up with cheesecake balls, which consists of cheesecake rolled into balls covered in Belgian chocolate.

“You can have a decadent dessert without feeling oozy,” she said. “This allows you to have a good quick dessert.”

People were fascinated and intrigued when they first tried it because while it was good, they weren’t sure what they were eating, Pilla said. She now offers 13 flavors, including red velvet and even Irish cream around St. Patty’s Day.

She bakes at a facility in Long Island City and does the majority of her business online. Word of mouth has also spread and allowed her to make the cheesecake balls for bridal showers, bar mitzvahs and Mother’s Day brunches.

“People love it,” she said.

She is trying to get more customers through social media and often attends networking events, where she tells people about her company. She is constantly inventing new flavors and hopes to open a store in the West Village and Long Island City in a couple of years.

“I should have done it a long time ago,” she said. “I was playing it safe.”
