Marshmallows are a favorite treat among children. The soft, squishy exterior and the creamy, sweet interior are simply irresistible, especially when they can come in different shapes and flavors.

Mitch Greenberg, owner and creator of Mitchmallows, has invented more than 36 flavors of marshmallows that are not only pleasing to the mouth, but also pleasing to the eyes.

Greenberg, once a set designer and a graduate of Ringling Bros. and Barnum & Bailey Clown College, put his passion for sweets into creating unique marshmallows that cater to special occasions, such as bridal parties and birthdays.

“My background in design taught me how to tell a story with marshmallows,” said Greenberg. “And the clown college helped me bring out the creativity.”

Mitchmallows come in an array of flavors, such as ginger-wasabi, pretzel and beer, and maple syrup pancake.

“We do marshmallow flavors that no one had before,” says Greenberg excitedly. At the same time, they make special themed marshmallows during holidays, such as Easter and Christmas. “We even do Passover-themed marshmallows.”

The place where the magic happens is the Entrepreneur Space in Long Island City. There, Greenberg brings his imagination and creativity to life. One of the most unique marshmallows is the BLT s’mores, where a tomato-flavored marshmallow is placed on a piece of toast with bacon on top.

The creamsicle mallow is another favorite among customers, since it tastes just like the half-vanilla, half-orange creamsicle pops from back in the day.
